The continuing avalanche of tourists from all over the planet has not dented the famed Mallorcan cuisine, defined by generous olive oil and homegrown produce. For just less than a million residents, there are a staggering 1,200 restaurants of all tastes in Mallorca.

Desserts are Mallorca cuisine’s weakest link. There are few of Arab and Jewish derivation. Helado (ice cream) and flan (creme caramel), ensaimadas (fluffy, spiral-shaped pastries dusted with sugar and filled with sweet or savory). Then there are cheeses, local gentle drinks of freshly squeezed orange, or almonds (orxata or almond milk), café solo (a small shot of strong black coffee), tea, and relaxing manzanilla (chamomile) tea.
